Its removal is difficult; hope for a surgeon’s fingers and a butcher’s grip. Don’t let it slide. Timing is everything. If you whip it out too soon, you’ll leave a thumping mess in its wake. Watch out for spatter and blood loss; let your knife glide. Slice cleanly and sever all connections. Cup your hands around it and tug. Plug ventricles. Freeze until required. Thaw the heart at room temperature when you are ready to transplant it. Apply salt to stubborn stains. Cover it with bubble wrap, handle with care. Do not give it away lightly.
